| The Staleys first planted this variety for blending, but Philip has found it to be delicious on its owna long wine with plum, blackberry, and chocolate flavors. Another challenging grape in the vineyard, Mourvedre is the last grape to ripen. "I let it get fully ripe and soft," says Philip. Following harvest, the grapes cold soak for 24 to 48 hours, then ferment in small open-top fermenters with twice-daily punch downs. Blended with 5% Grenache, this Mourvedre has a smoky, fruity nose and a soft full impression in the mouth. The lengthy finish tastes of black cherry. | ![]() |
